fresh rolls

fresh rolls

put a bag of frozen shrimp in the air fryer
cook some rice noodles (instructions on package)

in a skillet:
            • butter (at least a tablespoon, more is better)
            • broth base of choice (a teaspoon or so) I like roasted garlic
            • actual minced garlic (like a tablespoon of it)
            • a bag of frozen broccoli pieces
            • lime juice (from one or two limes)
allow everything to cool
wrap stuff in rice paper (instructions on package)

I don't know how many it'll make because I keep forgetting to count but it feeds me for at least 2 meals.
You can leave out the broth base if you want, it just gives it all a more robust flavor.

You can also sub out stuff. Deli meats actually work well if you don't wanna cook the meat. Also that pre-cooked shredded chicken that a lot of grocery stores have is pretty convenient for this. And you can switch out the veggie. Or use lemon instead of lime. Or leave the lime and garlic out. You could even leave the butter out (or replace it with coconut oil - I've tried that too and it works pretty well)... basically just cook what you want to put in there, let it cool, then throw it all into the wraps.

The important part is to not care if it's exactly "right," and make what you want.
